pink velvet cupcakes

These were yummy, like red velvet cupcakes, but pink and made with white chocolate. When I made them, the recipe made exactly 30 little cakes.




Makes 24-30 cupcakes
Pre-heat your over to 350 degrees
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, softened
1 1/2 cups sugar
4 large eggs
1 teaspoon pure vanilla extract
1 1/4 cups milk
8 ounces white chocolate, melted
pink gel-paste coloring

1) Sift the flour with the baking powder and salt.
2) In a large bowl, using an electric mixer, beat the butter at low speed until smooth. Add the sugar and beat until fluffy, about 3 minutes.
3) Add the eggs, 1 at a time, beating for about 10 seconds after each addition.
4) Add the vanilla.
5) At low speed, alternately beat in the dry ingredients and the
milk in 2 additions.
6) Add the melted white chocolate and beat just until incorporated.
7) Add anywhere from 1/8 - 1/4 tsp. of the pink gel paste
8) Scoop batter into paper-lined muffin tins, about 2/3 full.
9) Bake 20-24 minutes. Insert a toothpick into the middle of the cupcake. If it comes out clean, they're done.
9) Cool cupcakes on a wire rack.
Frost with your favorite cream cheese frosting.

They are delicious. They have a mild flavor and remind me of a treat you could have with a cup of tea. Well done! You have no reason to worry about your baking skills!

You know, I think you are right Michelle, the pan pictured is the last pan I did and I think that those were a bit fuller than the rest.

Ok, now I want to know how you keep your pan looking so clean and new? mine are starting too look old and used. I guess that means they are at least being used but...
